Fundamental Properties to Look for in Oven Rack Castor Wheels

When setting up a commercial bakery, you need commercial equipment to facilitate your operations. One such piece of equipment is a conventional oven rack designed to support several baking pans and their contents. Notably, convectional oven racks are equipped with castor wheels that allow staff to wheel them into and out of an oven with ease. However, you must consider the harsh conditions in a commercial kitchen when choosing oven racks. This article highlights essential properties to look for in the castor wheels of bakery oven racks.

High-Temperature Resistance 

Commercial bakeries are some of the hottest industrial facilities around. Typically, standard bread bakes at temperatures between 220-230 degrees Celsius. These are very high temperatures by any standards; hence, castor wheels on the oven racks you choose must withstand the heat. Therefore, when selecting oven racks, look for models whose castor wheels are made of nylon, phenolic resin and cast iron. Additionally, ensure the castors are certified for use in the food industry. Remember, high-temperature castors must remain relatively cool regardless of how long racks stay inside an oven.

Groove-Less Design 

Although germs are less likely to thrive in hot environments like a commercial bakery, it is essential to invest in oven racks with hygienic castor wheels. The reason is that the lowest tray in an oven rack is close to castor wheels. Notably, the most hygienic castors are groove-less since the design limits the accumulation of food particles on the wheels. If you buy oven racks with grooved castors, you will be forced to clean them regularly to prevent food particles from collecting and rotting inside moving parts. Most importantly, castors designed for commercial bakeries have few moving parts, making them easy to clean and rinse off.

Easy to Operate 

Pulling several oven racks filled with baked products from an oven to a cooling zone is no easy feat. Therefore, the right castor wheels should make the pulling and pushing of racks easy and efficient. Oven rack castors that make operations easy without compromising hygiene feature enclosed bearings, allowing the wheels to glide effortlessly across a production floor. Besides, since the castors are enclosed, there is no space for food particles to collect. Additionally, maintaining castors with enclosed bearings is easy since you do not need to lubricate them routinely. As your operations grow, you will gradually begin to appreciate the benefits of having easy-to-operate oven rack castors.
